Booth cofounded Ellington Properties in 2014. It has a portfolio of over 1,420 completed units. Its projects in Dubai are located in Mohammed Bin Rashid City, Emirates Hills, Palm Jumeirah, Jumeirah Village Triangle, Jumeirah Lake Towers, and Dubai Hills Estate, among other areas. In January 2023, the company partnered with the Dubai Multi Commodities Centre to launch the $326.8 million UH by Ellington project in Jumeirah Lakes Towers. In June 2023, Ellington Properties signed an agreement with RAK Properties to develop a residential project on Hayat Island. Booth previously held various positions at Emaar Properties, including CEO of its North America region and CEO of the overall Real Estate division, where he was involved with flagship projects, including Downtown Dubai and the Burj Khalifa.
