Tiwari has been the general manager of the Taj Dubai since August 2021 and was appointed area director of operations for the Middle East in 2024. He oversees more than 1,000 people in three properties across the Middle East. In 2023, Taj Dubai saw a 20% increase in revenues compared to 2022. It also revamped two of its existing F&B venues—Miss Tess and Treehouse—and introduced a new venue, La Terazza, for guests of its members-only club, The Chambers. Tiwari began his hospitality career as an F&B assistant in 2000 in Jaipur, India. He has also previously held roles in London, Mallorca, and Ibiza.
